Z Roasted Chickpeas

About this recipe

Chickpeas trace their agricultural roots to the Fertile Crescent, where they were among the early crops cultivated by farming communities. This oven-roasted version gives that ancient ingredient a crisp texture, warm spices, and fragrant lime zest, with fresh lime juice served alongside.

WHY YOU’LL LOVE IT

Oven roasting turns everyday canned chickpeas into a crisp, golden snack. Chili, cumin, coriander, and lime zest deliver warm spice and bright citrus flavor. Simple pantry ingredients make an easy snack to share or a crunchy topping for meals.

Ingredients

  • 3 cans chickpeas (15 oz / 425 g each), drained and rinsed; use 750 g drained chickpeas in total
  • 3 tbsp vegetable oil (45 ml / about 41 g)
  • ¾ tsp chili powder, a mild American-style spice blend (about 2 g)
  • ¼ tsp ground coriander (about 0.5 g)
  • ¼ tsp ground cumin (about 0.5 g)
  • ¼ tsp granulated garlic (about 0.8 g)
  • ¼ tsp granulated onion (about 0.6 g)
  • Kosher salt (3 g; measure by weight because crystal sizes vary)
  • 2 tsp finely grated lime zest (about 4 g, from approximately 2 limes)
  • ¼ cup fresh lime juice (60 ml, from approximately 2 limes), served separately

Preparation

  1. Drain and rinse the chickpeas. Measure 750 g after draining. Spread them over clean kitchen towels or paper towels, then gently pat and roll them dry. Remove any loose skins.
  2. Spread the chickpeas on a large rimmed baking sheet and let them air-dry for 30 minutes. Meanwhile, preheat the oven to 400°F (200°C).
  3. Toss the dried chickpeas with the vegetable oil until evenly coated. Spread them in a single layer, using two baking sheets if necessary to avoid crowding.
  4. Roast for 35–45 minutes, stirring every 15 minutes, until golden and crisp. If using two baking sheets, rotate their positions halfway through cooking. Begin checking at 35 minutes; add a few more minutes if the centers are still soft.
  5. While the chickpeas roast, combine the chili powder, coriander, cumin, granulated garlic, granulated onion, and salt in a small bowl.
  6. Remove the chickpeas from the oven. Immediately toss with the spice mixture and lime zest while still hot.
  7. Let cool for about 5 minutes, then divide evenly among 4 servings. Serve the lime juice separately, allowing each person to add it just before eating. Add juice only to the amount being eaten immediately, as moisture softens the chickpeas.

Tips

  • Thorough drying and a single, uncrowded layer help the chickpeas roast evenly and become crisp.
  • Test one chickpea after letting it cool briefly; the center should be crisp rather than soft.
  • Add the spices after roasting to keep the garlic, onion, and chili powder from scorching.
  • Grate only the green outer layer of the limes, avoiding the bitter white pith.
  • For the best crunch, enjoy shortly after roasting and keep the lime juice separate until eating.
