ISSUE 03 · GREAT FOOD, STRONGER COMMUNITIES
FOOD, BUSINESS & COMMUNITY
Healthier choices begin with what’s available.
Food choices happen in real places: our kitchens, neighborhood shops, and favorite restaurants. Making nutritious options available is one practical way to support healthier eating.
Research in restaurants and food stores has found that an intervention can improve the food environment without producing substantial changes in customer behavior. Access matters, but availability alone does not guarantee that habits will change.
For a useful step at home, compare the Nutrition Facts labels on ingredients you buy regularly. Compare equivalent serving sizes, and look at sodium, saturated fat, and added sugars. The label can help you choose between similar products without giving up a familiar dish.
Small decisions can become repeatable practices: compare one ingredient, prepare a vegetable side, or ask what options are available when ordering. A healthier food environment grows through practical choices and continued support.
THIS MONTH AT OUR TABLE
The Entrepreneur’s Table
Great food. Practical skills. Community opportunity.
Behind a neighborhood food business are people making daily decisions about recipes, ingredients, costs, and service.
The Entrepreneur’s Table brings culinary guidance, nutrition education, and business support together for local food entrepreneurs. In partnership with BakerRipley Entrepreneur Connection, the program offers support for day-to-day operations, financial learning, and nutritious menu development.
A 2023 study explored the experiences of 19 former participants in Bite of HOPE’s Small Food Business Development program. Participants reported satisfaction and perceived improvements in business development and personal eating habits.
FROM OUR KITCHEN TO YOURS
Pico de Gallo
Fresh ingredients. A familiar finishing touch.
This recipe from our kitchen brings together tomatoes, onion, citrus, cilantro, garlic, and jalapeño. Spoon it alongside a meal or use it as a topping to add fresh flavor.
For this edition’s kitchen practice, compare labels on any packaged ingredients served with it and pay attention to the amount of salt added. A flavorful topping is one part of the whole meal; ingredients and portions still matter.
Behind the bite
Tomatoes, onion, cilantro, and citrus bring color, texture, and fresh flavor to this recipe. Serve it alongside a familiar meal or spoon it over a dish just before eating.
A LITTLE KITCHEN WISDOM
Taste before adding salt. Lime, cilantro, and jalapeño bring their own flavors. Wash produce before preparing it, and adjust the chili to your preference.
