Ingredients

  • 1 Large Egg
  • 1 cup of Milk
  • 1 cup All Purpose Flour
  • 1/4 cup Extra Virgin Olive Oil
  • Blueberries
  • Raspberries
  • Strawberries
  • Bananas
  • Apples
  • Powdered Sugar
  • Cinnamon
  • Lemons
  • Greek Yogurt

Preparation

  1. In a bowl add the milk and the flour with a whip mix it all together (make sure there are no lumps)
  2. Add the egg and mix (make sure not to overmix)
  3. Wait for a few minutes for the batter to settle
  4. Pour some batter into a hot flat pan (crepe pan). Begin at the center and using a circular motion; widen the circle as much as you can
  5. Cook until you can see it turn golden.
  6. Sprinkle powdered sugar, some cinnamon if you like, and finish with drops of lemon
  7. For a fresh taste: top with fruits and Greek yogurt
  8. For a fruity taste:fill with fruits

Fold in half and fold in half again, forming a triangle or simply roll them!
