Fresh cilantro and lime give this sauce a lively, tangy flavor. A little cumin, paprika, and red pepper bring gentle warmth. Drizzle it over tacos, grilled chicken, fish, or roasted vegetables.

Ingredients

  • 2 packed cups fresh cilantro leaves and tender stems (about 2 oz / 55 g)
  • ¼ cup canola oil (2 fl oz / 55 g)
  • 2 tbsp fresh lime juice (1 fl oz / 30 g)
  • 2 tbsp water (1 fl oz / 30 g), plus more as needed
  • 1 tsp ground cumin (about 2 g)
  • ½ tsp paprika (about 1 g)
  • ½ tsp red pepper flakes (about 1 g)
  • ½ tsp garlic powder (about 1.5 g)
  • ½ tsp kosher salt (about 3 g), or to taste

Preparation

  1. Rinse the cilantro and pat it dry. Remove any tough stems.
  2. Add the cilantro, lime juice, water, cumin, paprika, red pepper flakes, garlic powder, and salt to a blender.
  3. Blend while slowly pouring in the canola oil, until the sauce is smooth and bright green.
  4. Add water a teaspoon at a time if needed to reach a pourable consistency.
  5. Taste and adjust the salt, lime, or red pepper flakes. Serve right away or refrigerate until ready to use.

Tips
Use the tender cilantro stems; they blend easily and add flavor.
For a milder sauce, reduce or omit the red pepper flakes.
Refrigerate leftovers in a covered container and use within 3 days.
