Thai Coconut Split Pea & Lentil Soup

Ingredients

Onion 1 cup 50
Carrot 1 cup 56
Garlic 1 tbsp 15
Red Curry Paste 0,33 cup 142
Lentils 1 cup 239
Split Pea 1 cup 231
Coconut Milk 1 cup 472

Preparation

  1. Over med-high heat sautee onion and carrots until soft.
  2. Lower temp to medium and add garlic and curry paste. Cook for about 30-60 seconds or until fragrant.
  3. Add lentils, split peas, & stock. Bring to a boil then reduce to a simmer over med-low heat for about 30 mins, until lentils are soft.
  4. About 10 min before lentils are finished cooking add in coconut milk.
  5. Add salt as needed. 6. Service with a lime wedge, toasted almonds and cilantro.
