Bourbon Sauce

Sugar 2 cup 1600
Water 1/2 cup 0
Heavy Cream 1 cup 840
Vanilla Bean 1 ea 12
Lemon Juice 2 tsp 4
Unsalted Butter 2 tbsp 217
Bourbon 2 tbsp 130

Preparation

  1. Combine sugar and water in a saucepan on medium heat. Without stirring let the sugar and water bubble until it turns a dark amber. Roughly 20 minutes.
  2. When the mixture is a deep amber reduce heat to low. Slowly add cream, stirring slowly. It will thicken up but just keep stirring until it turns into a caramel.
  3. Scrape in the vanilla paste, lemon juice, salt, butter, and bourbon. Stir to combine.
