Green Chili Lentil Soup

Low Sodium Vegetable Broth 12 cups 60
Lentil 2 cups 500
Fire Roasted Diced Tomatoes 28 oz 112
Chopped Green Chilis 12 oz 40
Yellow Onion 1 ea 24
Celery Stalks 2 ea 12
Red Bell Pepper 1 ea 20
Garlic 5 ea 24
Cilantro 1 bunch 24
Cumin 1 tbsp 29
Oregano 2 tsp 8
Smoked Paprika 2 tsp 4
Chili Powder 2 tsp 8

Preparation

  1. In a stock pot cook onion, celery, and bell pepper over medium high heat until soft, about 5 minutes. Add garlic and cook for about a minute.
  2. Add cumin, paprika, oregano and chili powder. Toast for about a minute.
  3. Deglaze pot with tomatoes and green chiles. Make sure to scrape up all the good bits on the bottom.
  4. Add lentils and broth. Bring to a boil, reduce to simmer and cover. Let cook for approximately 30 min or until lentils are soft.
  5. Add in cilantro and season with salt to taste.
  6. Serve with a lime wedge.
