Ingredients
7 ounces of white beans (dry or a can of white beans)
2 ounces of olive oil
3 ounces of wine vinegar
1 or 2 garlic cloves, minced
2 tablespoons of chopped parsley
Cayenne pepper or chili powder to taste
Salt and pepper
Preparation
Soak the beans a day before or use canned beans.
Cook the beans until they are tender, they should be fully cooked
In a bowl mix oil, vinegar, garlic and parsley. Add the beans, mix very well and rectify with salt and pepper. Add the cayenne or chili powder.
Prepare the Provençal beans in advance as it is very important to give the spices time to release their flavors and absorb them by the beans.
Tips
Dry beans can the double in size once hydrated.
This beans can stay in your fridge for up to 3 weeks. This can be a healthy snack for you and your familiy.
