Ingredients
Ingredients (4 Servings)
5 ounces - Multicolored Quinoa (1 cup)
2.3 ounces - Red Bell Pepper (½ pepper)
2.6 ounces - Fresh Cheese
3 ounces - Red Onion (1 small onion)
1 yellow lemon
Herbs to taste (quirquiña and dried huacataya, mint, etc.)
Preparation
Step 1: Rinse the quinoa very well to remove the bitter taste.
Step 2: Cook the quinoa.
Step 3: Cut the onion, bell pepper and cheese into very small cubes.
Step 4: Grate the lemon peel.
Step 5: Pour the lemon juice over the red onion, mix.
Step 6 : When the quinoa is ready, rest for 5 - 10 min.
Step 7: Mix the quinoa with the bell pepper, onion and cheese.
Step 8: When serving, put the grated yellow lemon peel and herbs to taste, for presentation.
Tips from La Chefcita
I did not include salt in the recipe because many fresh cheeses are salty.
Taste the salt.
Don't be afraid to experiment with different fresh or dried herbs.
