Ingredients

  • 1 cup Short Grain Rice (Sushi rice)
  • 1 cup Water
  • 1/2 Rice Vinegar
  • 2 Tbsp. Sugar
  • 1/2 cup Mirin Rice Wine (optional)

Preparation

Bring the water to boil and add the rice, pinch of salt and pinch of sugar

Let it cook for 10 minutes on low temperature and turn it off

Wait 10 minutes before opening the lid

In a separate pot, bring the rest of the ingredients to a simmer (do not let it boil)

Add these ingredients little by little to the rice

*Always use warm sumeshi rice so it's easy to shape

*A rice cooker would be the perfect helper for this recipe. If using one, add all the ingredients at once
