Chorizo Quinoa

Preparation

  1. Over medium-heat cook bell pepper and onion until softened, about 5 minutes. Stir in tomato paste and seasoning, cook for 2 minutes.
  2. Stir in quinoa and cook for 1-2 minutes, allowing the quinoa to toast. Add broth and bring to a boil. Once at a boil reduce heat to medium-low and simmer for 15 minutes or until all liquid is absorbed.
  3. Season with salt
