Preparation
Over med-high heat sautee onion and carrots until soft.
Lower temp to medium and add garlic and curry paste. Cook for about 30-60 seconds or until fragrant.
Add lentils, split peas, & stock. Bring to a boil then reduce to a simmer over med-low heat for about 30 mins, until lentils are soft.
About 10 min before lentils are finished cooking add in coconut milk.
Add salt as needed. 6. Service with a lime wedge, toasted almonds and cilantro.
