Ingredients

  • 4 boneless, skinless chicken breasts, about 6 oz each (1½ lb / 680 g total)
  • 3 tbsp extra-virgin olive oil, divided (1½ fl oz / 45 ml)
  • ½ tsp kosher salt, plus more to taste (about 3 g)
  • ¼ tsp freshly ground black pepper (about ½ g)
  • 2 garlic cloves, finely chopped (about ¼ oz / 6 g)
  • 1 tbsp fresh thyme leaves (about ⅛ oz / 3 g)
  • 1 tsp crushed red pepper flakes (about ⅛ oz / 2 g), or to taste
  • ¾ cup low-sodium chicken broth (6 fl oz / 180 ml)
  • ½ cup chopped oil-packed sun-dried tomatoes, drained (about 2¾ oz / 80 g)
  • ½ cup heavy cream (4 fl oz / 120 ml)
  • ¼ cup finely grated Parmesan (about ¾ oz / 22 g)
  • ¼ cup torn fresh basil leaves (about ⅛ oz / 5 g)

Preparation

  1. Preheat the oven to 375°F (190°C). Pat the chicken dry and season both sides with salt and black pepper.
  2. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken until golden, about 5 minutes per side. Transfer it to a plate.
  3. Reduce the heat to medium. Add the remaining olive oil, garlic, thyme, and red pepper flakes. Cook for about 1 minute, stirring, until fragrant.
  4. Stir in the chicken broth, sun-dried tomatoes, cream, and Parmesan. Bring the sauce to a gentle simmer, then taste and adjust the salt.
  5. Return the chicken and any collected juices to the skillet. Bake until the thickest part of each breast reaches 165°F (74°C), about 10–12 minutes.
  6. Spoon the sauce over the chicken, scatter the fresh basil on top, and serve.

Tips
Choose chicken breasts of similar thickness so they cook evenly.
Keep the sauce at a gentle simmer before baking; boiling can make the cream separate.
Serve with pasta, rice, potatoes, or crusty bread to catch the sauce.
