Mango Salad

Ingredients

  •  10 oz or large mango
  • 10 oz of avocado
  • 3.5 oz  of red onions
  • 1 oz of lemon juice
  • 6 cups of lettuce
  • Salt and pepper to taste

Vinaigrette ingredients

  • 1.5oz of orange juice
  • 1 oz of lemon juice
  • 2 oz olive oil
  • 1 oz of white wine vinegar
  • 1 oz of chopped cilantro
  • 1 hot pepper finely chopped (optional)
  • 1/4 teaspoon of cumin
  • 1/4 teaspoon of cilantro

 

Preparation

Instructions for the vinaigrette

  1.  Crush the coriander seeds in a mortar.
  2.  Finely chop the fresh cilantro and hot pepper (optional).
  3.  Place all the ingredients for the vinaigrette in a glass jar, cover and shake to blend.
  4.  Place in the refrigerator.

Instructions for the salad

  1. Finely cut onions, then soak them in warm water with 1/2 teaspoon of of salt and the lemon juice. Let it seat 10 minutes, then drain and place the onions on a paper napkin.
  2. Wash the lettuce and cut it into large pieces.
  3. Dice the avocado.
  4. Dress the lettuce leaves with half of the vinaigrette.
  5. Place the mango and avocado mixture on top of a bed of lettuce.
  6. Spread the onion, drizzle the rest of the vinaigrette, add salt and pepper to taste and garnish with the red chili peppers.

Tips

-Both the mango and the avocado must be ripe but firm.

- The vinaigrette can be prepared in advance, but the mango and avocado must be peeled and cut when serving.
