Preparation

  1. Heat oil in a large pot over medium high heat and stir-fry the chicken until browned. Remove from the pot and set aside.
  2. Add the khao soi paste. Fry for 3-5 minutes, until fragrant. Add the Thai red curry paste, broth, and sugar, and bring to a boil.
  3. Reduce the heat to low. When the broth is at a low simmer, add the coconut milk, fish sauce and the chicken back to the broth.
