Z Spinach & Cottage Cheese Scramble on Whole-Grain Toast

About this recipe

Spinach is believed to have been first domesticated in Persia, present-day Iran, before spreading into other food traditions. This modern breakfast pairs those tender greens with eggs, cottage cheese, and whole-grain toast for a creamy scramble with a crisp, hearty base.

WHY YOU’LL LOVE IT

ottage cheese gives the eggs a creamy texture and helps each serving provide approximately 30 g of protein. Tender spinach and crisp whole-grain toast bring contrasting textures to every bite. Everyday ingredients come together in about 20 minutes for a satisfying savory breakfast.

Ingredients

Makes 4 servings. Each serving includes one-quarter of the scramble and 1 slice of whole-grain toast.

  • 8 large eggs (about 400 g without shells)
  • Plain cottage cheese, 4% milkfat (400 g / about 1¾ cups)
  • Fresh baby spinach, washed, thoroughly dried, and roughly chopped (200 g)
  • 1 tbsp extra-virgin olive oil (15 ml / about 13.5 g)
  • ¼ tsp salt (1.5 g)
  • ¼ tsp freshly ground black pepper (about 0.6 g)
  • 4 slices whole-grain bread (40 g each / 160 g total)

Preparation

  1. In a large bowl, whisk the eggs with the salt and black pepper until the whites and yolks are combined. Gently stir in the cottage cheese.
  2. Heat the olive oil in a large nonstick skillet over medium heat. Add the spinach in batches and cook, stirring, for 2–3 minutes, until wilted. Let any visible liquid evaporate before adding the eggs.
  3. Reduce the heat to medium-low. Pour in the egg and cottage cheese mixture. Let it begin to set, then use a silicone spatula to gently draw the cooked egg from the edges toward the center.
  4. Continue cooking gently, folding rather than stirring constantly, until soft curds form and the eggs are fully set with no liquid egg remaining, about 5–8 minutes. The cottage cheese may remain visible as small white curds.
  5. Meanwhile, toast the 4 slices of whole-grain bread without adding butter or oil.
  6. Divide the scramble evenly among 4 plates. Serve each portion on or alongside 1 slice of toast and enjoy immediately.

Tips

  • Choose a thick cottage cheese rather than a very watery product, and stir it before measuring.
  • Dry the spinach thoroughly and evaporate its cooking liquid to keep the scramble from becoming watery.
  • Use gentle heat after adding the eggs; high heat can make the curds tough and release more moisture.
  • If your skillet is not large enough, cook two batches using half of every scramble ingredient for each batch.
  • Choose bread with whole-grain flour listed as its first ingredient. The nutrition estimate includes one 40 g slice per serving.
