Z Celery & Lime Juice

About this recipe

Celery’s cultivated ancestors trace back to the Mediterranean region, where the plant was known to early civilizations. This modern juice pairs its crisp, savory flavor with fresh lime for a bright, tart finish.

WHY YOU’LL LOVE IT

Fresh lime brightens celery’s crisp, savory flavor. Just two ingredients, with no added water or sweeteners. A smooth, freshly extracted drink ready in 10 minutes.

Ingredients

  • About 5 cups chopped celery (500 g), weighed after trimming
  • 1 tbsp fresh lime juice (15 ml)

Makes: 1 large glass, approximately 1½ cups (350 ml). Actual yield varies with the celery and juicer.

Preparation

  1. Wash your hands and make sure the juicer, collecting jug, and serving glass are clean.
  2. Separate the celery stalks and rinse thoroughly under running water, removing dirt from the grooves and around the base. Remove the base and any damaged parts.
  3. Weigh 500 g of trimmed celery, approximately 5 cups when chopped. Cut into pieces suitable for your juicer’s feeding chute.
  4. Process the celery according to the juicer manufacturer’s instructions, collecting the extracted juice in the jug. The juicer separates the pulp from the liquid; remove and discard the collected pulp.
  5. Stir 1 tbsp fresh lime juice (15 ml) into the extracted celery juice. Do not add water.
  6. Pour the entire batch into one large glass and drink immediately. The expected yield is approximately 350 ml, including the lime juice.

Tips

  • Use chilled celery and lime juice for a cold drink without adding ice.
  • This recipe requires a juicer. Blending with water changes the method, concentration, and final yield.
  • Weigh the celery after trimming. Cup measurements are approximate because the size of the pieces affects how much fits in a cup.
  • The finished drink is naturally savory and tart, with a green color that varies according to the celery used.
  • Prepare only what you intend to drink and enjoy immediately. Storage is not recommended for this homemade, unpasteurized juice.
